Chicken Soup

This is a really easy Chicken Soup recipe to make from scratch. It's very cheap to make, sufficiently filling and It tastes delicious too! Some people would also consider this dish to be medicinal, I sure do.

If you're feeling run down or maybe just a bit under the weather, Chicken Soup is an ideal meal to make. this simple chicken coup recipe takes minimal preperation time, you only have to chop a few things up. Plus it's a one pot meal, so minimal washing up too!

Homemade chicken Soup is great for when you have a cold or flu. Not only does the goodness from the soup, fill the body with needed nutrients, but the steam from the bowl of soup will also help to cleanse the sinuses and ease any head pains.

Even if you aren't feeling unwell, this homemade Chicken Soup recipe makes a great family meal that everyone will enjoy.

Chicken Soup Ingredients

Based on a medium sized pan - serves 4 regular portions

Any pieces of Chicken you choose - thighs, drumsticks, wings, breast (1 - 2 per person)

3 Chicken Stock Cubes

1 Large Onion

1 Large Carrot

Cold Water

How To Make An Easy Chicken Soup:

 
  • Dice the onion quite into small pieces
  • Slice the carrot to preference
  • Add the chicken, diced onion and carrot into a pan
  • Add the 3 stock cubes
  • Fill pan with cold water (about an inch below the top)
  • Cover and bring to the boil
  • Let simmer for at least 1 hour
  • The longer that this soup simmers for, the better it will taste

Serving Chicken Soup

I like to serve mine with Vermicelli, boiled in a seperate pan with a chicken stock cube for 3-4 minutes. Drain then add to a bowl of the chicken soup.

Tip: Don't add the Vermicelli to the soup in the pan or it will go soft and make the soup thicker.

Another tip is to use a good quality stock cube.

This Chicken Soup is so simple to make, and definitely worth trying. Any pieces of chicken can be used for this recipe, though for a full hearty flavour, I would recommend that pieces with bone be used for the extra flavour. The bones infuse the soup with a rich chicken flavour that isn't quite apparent when using just chicken breasts.

This soup can easily be frozen and re-heated.

Hi,

Sounds wonderful! I don't know if that brand is sold where I live, but I'll look. A great recipe for what ails you, also nice in the fall/winter weather! Growing up, my grandmother made her soup the whole meal, it had everything in it, and served it with her homemade bread,,,yummy!
